Ingredients:
- 🍤 500g large shrimp (peeled and deveined)
- 🧂 Salt and pepper to taste
- 🌶️ 1/2 tsp chili flakes (optional for heat)
- 🧄 4 cloves garlic (minced)
- 🧈 4 tbsp unsalted butter
- 🥛 1/2 cup heavy cream
- 🧀 1/2 cup grated Parmesan cheese
- 🥬 1 cup fresh spinach leaves
- 🍅 1/2 cup sun-dried tomatoes (drained and chopped)
- 🍋 Juice of 1 lemon
- 🌿 Fresh basil for garnish
Instructions:
- Prepare the Shrimp: Season the shrimp with salt, pepper, and chili flakes (if using). Set aside.
- Cook the Shrimp: Heat 2 tbsp of butter in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes on each side until pink. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
- Add Cream and Parmesan: Pour in the heavy cream, stir in the Parmesan, and let it simmer for 2-3 minutes until slightly thickened.
- Add Tomatoes and Spinach: Stir in the sun-dried tomatoes and spinach, and cook until the spinach wilts.
- Finish with Shrimp: Add the cooked shrimp back into the sauce. Squeeze lemon juice over and let it cook for an additional 2 minutes.
- Garnish and Serve: Garnish with fresh basil and serve over pasta, rice, or with crusty bread.
